Chicken Wings-Glaze and Dipping Sauce

The internet is awash with the most amazing chicken wing recipes, using various cooking methods, marinades, and seasoned flours and most of them are far better than mine, but what you might need is a simple but delicious idea for a Candied Jalapeño BBQ glaze and a Ranch-style Jalapeño dipping sauce.

Candied BBQ Glaze for Chicken Wings

Ingredients

Method

1. Melt butter in a small saucepan on a low heat.

2. Add BBQ sauce and water and stir until just warm. If you like a thicker glaze, add less water.

3. Put the wings into a bowl and toss them until covered. Sprinkle on the sesame seeds and serve immediately.

Ranch-style Candied Jalapeño Dipping Sauce

Ingredients

  • 3 tbsp Mayonnaise
  • 3 tbsp Half Fat Creme Fraiche
  • 1 tbsp Haynes Gourmet Candied Jalapeno Relish
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to season
  • Small squeeze of lemon juice (optional)

Method 

1. Mix all ingredients together and let it sit in the fridge for at least 20 minutes.

2. If you use lemon juice, stir it in just before serving. 

3. It’s that easy!

We have had plenty of suggestions for using our candied jalapeños in food, so I wanted to show you something a little out of the box. Cocktails are becoming more adventurous, and one way to be creative is to use the RED and GREEN rings as an addition to your festive beverages. It doesn’t have to be mulled wine - although that would be an easy one - but some of our favourite tipples can be tweaked with something a little sweet and spicy.

Remember, these are just suggestions. Feel free to change ingredients to suit your taste, and if you have time, why not dehydrate some thinly sliced citrus fruit (in a low oven setting) to garnish your cocktails. Method

1. Oven bake blinis as per instructions (if your oven is already full, use a Ritz cracker or Mini Cheddar).

2. Let the blinis cool, then spread with cream cheese.

3. Drain red and green jalapeño rings on kitchen towel.

4. Top a red or green (I chose to alternate) ring on each blini.

5. Decorate with dill leaf and serve immediately.

Method

1. Heat rapeseed oil to a medium-high heat. Fry individual sage leaves for 2-3 seconds and set aside to drain on kitchen towel.

2. Microwave meatballs as per instruction.

3. Place a small amount of cranberry sauce for each meatball on a serving dish.

4. Take a mini skewer and pierce sage leaf and meatball. Place on the sauce.


To make it even quicker and easier, put all the skewered meatballs with sage leaves in a bowl and the cranberry sauce in another. Let’s hope there’s no double-dipping!

Tear & Share Cheesy Cranberry Loaf

Tear & Share Cheesy Cranberry Loaf

Ingredients


Method

1. Heat the oven to 200*C and using a serrated knife cut in a one inch criss-cross pattern, making sure not to slice all the way through to the bottom (see photo).

2. Melt the butter and add the salt, pepper and thyme. Brush the loaf, getting in between the cuts.

3. Open up the cuts carefully and spread the cranberry sauce evenly. Use more depending on the size of your loaf.

4. Cut as much rind off the camembert and dice up the cheese. Tuck cheese into the cuts.

5. Wrap the whole thing in foil and bake in the oven for 20-25 minutes, or until the cheese is melty.

6. Remove from oven and let it rest for five minutes before serving.
